Cutting board sizes and thicknesses can make a much bigger difference than they may seem at first. When you are planning a new cutting board, the dimensions affect not only how the board looks, but also how comfortable it is to use, how stable it feels on the counter, how heavy it is to move around, and even how practical it is to build in the workshop.

Over time, I have found that the “best” cutting board size is not really just about following one standard dimension. It depends on what the board is for, how much working space you want, how thick and solid you want it to feel, and what tools or jigs you are using during the build.

Why Cutting Board Size and Thickness Matter

The size and thickness of a cutting board affect much more than just the final look. They change how the board feels in everyday use, how stable it is on the counter, how much workspace you have, and how solid or premium the board feels in your hands.

A board that is too small can feel limiting very quickly, especially if you actually use it for regular kitchen prep and not just for serving. On the other hand, a board that is too large or too heavy can become awkward to move, clean, or store. Thickness works in a similar way. A thinner board may be lighter and easier to handle, while a thicker board usually feels more solid, more durable, and a bit more premium.

This also matters from the builder’s side. The dimensions you choose affect how much material you need, how you lay out the glue-up, and whether the finished board fits comfortably through your machines or still works with something like a Router Flattening Jig. So even though the board size may sound like a small decision at the start, it shapes a lot of the project later on.

NOTE: Good cutting board dimensions are not just about what looks nice. They should also match how the board will be used, how it will be built, and how practical it will be in a real kitchen.

What Is a Good Size for an Everyday Cutting Board?

For an everyday kitchen cutting board, I think the best size is one that gives you enough space to actually work, but still feels manageable to move and clean. If the board is too small, it quickly becomes frustrating once you start cutting larger vegetables, meat, or several ingredients at once. If it is too large, it can become heavy and awkward, especially in a normal kitchen.

That is why I usually see the sweet spot somewhere in the medium-to-large range. You want a board that gives you real working space and feels stable on the counter, but still fits the kitchen well. For many people, that means choosing a size that is large enough for daily prep, not just a small decorative board.

This is also one of the reasons I personally prefer larger boards over smaller ones. Smaller boards can definitely look nice, and they work well for serving or quick light tasks, but for a proper kitchen board I usually want more room to work and a stronger overall feel.

TIP: If you are building one main cutting board for the kitchen, it usually makes sense to lean a little bigger rather than too small.

Common Cutting Board Thicknesses and What They Feel Like

Thickness changes the feel of a cutting board more than many people expect. Even if two boards have a similar length and width, the thicker one will usually feel more solid, more stable, and a bit more premium.

Here is a simple way to think about it:

Around 2 cm – 3/4″
Lighter and easier to handle, but usually feels more like a lighter-duty board or a simpler serving-style piece.
Around 2.5 to 3 cm – 1″ to 1 1/4″
A very practical middle ground. Thick enough to feel solid, but still not too heavy for everyday use.
Around 3.5 cm – 1 3/8″ and above
This is where the board starts to feel much more substantial and premium. It has more presence on the counter, handles pressure better, and usually feels like a more serious kitchen board.

That is one of the reasons I personally like thicker boards. They feel sturdier, more stable, and better suited for everyday kitchen work. Of course, that also adds weight, so there is always a balance between comfort, durability, and the overall feel you want.

Thicker is not automatically better for every build. It depends on whether you want a lighter board, a serving board, or a heavier all-purpose kitchen board.

How Board Purpose Changes the Best Dimensions

The best cutting board dimensions depend a lot on what the board is actually meant to do. A board for everyday kitchen prep usually benefits from more space and a sturdier thickness, while a serving board or a smaller decorative build can work well with lighter and slimmer dimensions.

That is why I would not look for one “perfect” cutting board size that fits every situation. It makes more sense to think about the purpose first, and then choose dimensions that support that use.

For example, if you want a board mainly for serving, presentation, or smaller kitchen tasks, you can usually go smaller and thinner. But if the board is meant to be your main kitchen work surface, it helps a lot to have enough room for ingredients, a stable feel on the counter, and enough thickness to handle regular use comfortably.

So before choosing the final dimensions, I think it helps to ask one simple question: Will this board be mainly decorative, mainly practical, or both? Once that is clear, the right size and thickness are usually much easier to choose.

My Preferred Cutting Board Size (And Why I Like It)

When I make a cutting board for real kitchen use, I usually like to stay around 52 × 30 × 3.5 cm (about 20 1/2″ × 11 3/4″ × 1 3/8″). Over time, that has become one of my favorite setups because it gives me a really good balance between usable workspace, sturdiness, and overall feel.

For me, that size is large enough to be practical on the kitchen counter and comfortable for everyday prep, but still manageable to move around. I do not really enjoy boards that feel too small once you start cutting for real. A proper kitchen cutting board should give you enough space to work without feeling cramped right away.

I also like the 3.5 cm (about 1 3/8″) thickness because it makes the board feel solid and more premium. It has enough mass to feel stable, it handles pressure well, and it does not feel like a light decorative board. That is the kind of feel I personally want from a kitchen board.

From the workshop side, those dimensions also make sense for how I build. They fit well with the way I prep stock, and they still work with my machines and jigs. If I go a little wider, I already know I may need to finish the board with my Router Flattening Jig, so that is part of the decision too.

So while I would not say this is the one perfect size for everyone, it is definitely the range I come back to when I want a board that feels practical, sturdy, and worth using every day.

TIP: If you want one main board for the kitchen, I think it makes more sense to build something that feels properly usable and solid, rather than going too small just to save a bit of material.

Layout Tips Before You Build

Before gluing anything up, I think it helps to spend a bit of time on the layout. This is where you can still make easy changes, save material, and avoid ending up with a board that feels off once it is finished.

A few practical things I would think about before building:

Leave enough working space
If the board is meant for real kitchen use, make sure the final layout gives you enough surface area to actually prep food comfortably.
Think about thickness from the start
The final board will usually end up a bit thinner after flattening and sanding, so it helps to plan for that early.
Plan your glue-up around usable strip widths
It is easier to build a clean board when the layout matches the stock you already have, instead of forcing exact dimensions too early.
Check how the finished size fits your tools
This matters more than it may seem. If the board ends up too wide for your planer, you already want to know that before the glue-up and have a plan, whether that means adjusting the size or using a Flattening Jig.
Think about the final use, not just the build
A board may look good on the bench, but still feel too small, too wide, or too heavy once it is actually in the kitchen.

For me, this part is not just about appearance. A good layout makes the whole project easier to build and helps the final board feel more practical once it is done.

How Tool Limits Can Affect Cutting Board Dimensions

This is something that matters a lot when you actually build cutting boards, but it does not get mentioned often enough. The final board size is not only about what looks good or what would be nice to have in the kitchen — it is also shaped by the limits of your tools.

For example, the width of your planer can directly affect how wide you want the board to be before glue-up or before final flattening. If the finished board is too wide for the planer, that does not automatically mean it is a problem, but you need to know it in advance and have another method ready. In my case, that usually means finishing the board with Flattening Jig.
The same goes for your table saw setup, sleds, clamps, or even the amount of support you have during glue-up. A cutting board may look perfectly reasonable on paper, but if it becomes awkward to flatten, trim, or handle safely in the workshop, that is worth thinking about before you commit to the final size.

That is one reason I like practical dimensions that work not only in the kitchen, but also in the shop. A good cutting board size should feel right for the use, but it should also be realistic for the way you actually build.

TIP: Before locking the final dimensions, think through the whole process — glue-up, flattening, trimming, sanding, and handling — not just the finished look.

Choosing the dimensions sounds simple at first, but this is one of the places where small decisions can affect the whole build. These are some of the most common mistakes I would watch out for:

Making the board too small for real kitchen use

Walnut vs Oak Wood (Cutting Boards, Bowls, Jigs & More)

Walnut and oak are two of the most popular hardwoods you’ll find in any workshop. I’ve used both on a variety of projects—from cutting boards and bowls to workshop jigs—and I keep coming back to them for different reasons. Each has its own strengths: oak is tough and stable, while walnut brings a rich, dark elegance that makes a project stand out.

Choosing between them isn’t always straightforward. For example, oak is great for jigs and structural parts because it doesn’t warp much, but I’d never use it for a cutting board because of its open pores. Walnut, on the other hand, is one of my favorite woods for boards and decorative builds, even though it comes at a higher cost.

Walnut Wood Overview

Walnut is a hardwood known for its rich dark color and fine, straight grain. In Europe, I usually work with European walnut, while in the US, black walnut is the most common type. In the workshop, walnut is one of my favorite choices for cutting boards. The wood is closed-grained, which makes it more hygienic than porous species like oak, and when you oil it, the color and figure really come alive. Oak Wood Overview

Oak is a tough, durable hardwood with a coarse, visible grain and a lighter, golden tone. In Europe, I mainly use European oak, but globally red oak and white oak are the most common. White oak is especially popular in furniture and flooring because of its strength and resistance to wear.

In the shop, I rely on oak more for structural parts and jigs than for decorative builds. Oak is stable, resists warping, and holds up well with temperature and humidity changes, which makes it perfect for miter bars in my table saw sleds, picture frame jigs, and other workshop fixtures. It cuts cleanly, and the smaller chips it produces are easier to manage with a dust collector compared to the long spirals I often get from walnut.

I do occasionally turn oak bowls, and they work fine for dry foods like nuts or chips. But for cutting boards or anything that comes in contact with water, I avoid oak—its open pores can trap moisture, which may lead to mold and hygiene issues over time.

Oak’s big advantage is that it’s widely available and more affordable than walnut, making it a go-to choice for large builds, furniture frames, and workshop projects where strength and cost matter more than looks.

This variation often makes walnut projects “pop” visually, especially in bowls or cutting boards where both tones appear together. Its distinctive grain pattern makes wear and tear less noticeable, which is one reason oak furniture ages so well.

Hardness & Durability

On the Janka hardness scale, white oak rates around 1,360 lbf, red oak about 1,290 lbf, and black walnut 1,010 lbf. That means oak is harder and more resistant to dents and scratches. In my workshop, I find oak especially reliable for structural parts like sled runners or jigs—it stays stable and doesn’t warp much with humidity changes. Walnut is softer but still strong enough for furniture and decorative projects, and its durability is more than adequate for everyday use.

Cost & Availability

Oak is widely available and generally much more affordable. Walnut, in contrast, grows more slowly and is considered a premium wood, so it’s always pricier. Because of this, I tend to reserve walnut for projects where design matters most, like cutting boards, decorative inlays, or feature pieces, while oak is my go-to for structural elements and jigs.

Workability (Cutting, Planing, Turning)

Oak and walnut both machine well, but they behave differently in practice. Cutting or planing oak usually produces smaller chips that are easier for the dust collector to handle. Walnut often creates long spiral shavings that can clog the collector if you’re not careful. For turning, I find walnut more enjoyable—the smooth grain and contrast make bowls look great—while oak’s coarse grain can be less appealing for fine detail work.

Food Safety & Cutting Boards

This is one of the biggest differences. Walnut is excellent for cutting boards: it’s closed-grain, resists moisture absorption, and looks beautiful when oiled. Oak, however, has large open pores. When exposed to water, it can trap moisture and eventually develop mold. That’s why I never use oak for cutting boards—but I do sometimes use it for bowls intended only for dry foods like nuts or chips.

Which Wood Should You Choose?

If you’re wondering whether walnut or oak is the better choice, it really comes down to the type of project you’re working on:

Cutting boards → Walnut is the clear winner. Its closed grain makes it safer for food prep, and the dark heartwood with lighter sapwood looks stunning when finished with oil. Oak’s open pores can trap water and lead to mold, so I never use it for boards.
Bowls → Both can work, but oak is best reserved for dry foods like nuts or chips. Walnut is more versatile and usually more visually appealing, especially when the grain and color variations come through.
Furniture → Both woods are excellent. Oak is harder and more resistant to dents, making it a great choice for heavy-use furniture. Walnut, though softer, brings a high-end look that makes it perfect for statement pieces.
Workshop jigs and structural parts → Oak shines here. It’s stable, affordable, and holds up well against wear and temperature changes. I use it all the time for sled runners, miter bars, and jig bases.

DIY Sanding Block: How to Build One (With Free Plans)

If you sand a lot of small pieces or edges, a good sanding block is one of those tools that just makes life easier. Sure, you can grab any flat scrap of wood and call it done — but I wanted something a bit more refined. Something that not only works great but also looks good in the shop.

So I built my own.

This one’s made from beech, walnut, and Baltic birch plywood — and while it’s just a sanding block at heart, it’s built to last, comfortable to use, and actually feels nice in your hand thanks to the routed finger slots and solid construction. The sandpaper locks in tight between two layers with bolts and nut inserts, and the whole piece has a kind of “cutting board” vibe to it that just makes it more fun to reach for.

Why Use a Sanding Block Like This?

A sanding block might seem like a simple tool, but the design makes a big difference in how it performs. A solid, well-shaped sanding block helps you keep surfaces flat, apply even pressure, and get much cleaner results compared to sanding by hand.

What I like about this design is that it holds the sandpaper firmly in place and feels comfortable to use, even during longer sanding sessions. That means better control and more consistent results, whether you’re working on small parts or larger surfaces.

This isn’t just a random offcut with sandpaper stuck to it. I wanted to make a sanding block that actually looks good and works well — something I’d enjoy having in the shop.

The block is made from two parts:

Top piece: laminated beech and walnut, backed by a 6.5mm Baltic birch plywood layer.
Bottom piece: 18.5mm Baltic birch plywood.

The two pieces are held together with M6 bolts and nut inserts, clamping the sandpaper in between. I also added finger slots on the sides so it’s easier to hold while sanding.

It measures 140mm x 80mm — compact, comfortable, and perfect for smoothing edges or smaller parts. I use it all the time around the shop. Let’s build it step by step.

How to Make a Sanding Block (Step-by-Step)

Step 1: Making the Top

I started by cutting a few strips of beech and walnut on the table saw — keeping the width consistent. Then I trimmed them to final size using my crosscut sled. Once I had enough strips, I mixed them into a nice alternating pattern and glued them together using my drill press vise as a clamp.

After the glue dried, I used my multipurpose router jig to flatten the block down to 6mm thickness. That became the visible top layer. To reinforce it, I glued it onto a 6.5mm piece of Baltic birch plywood. Together, they form a sturdy, stylish top for the sanding block — kind of like how you’d build a mini cutting board.

Step 2: Making the Bottom

The base is made from two pieces of Baltic birch plywood glued together — one 12mm thick, the other 6.5mm thick. Once glued, they match the size of the top piece perfectly. I trimmed the edges flush so the whole block stays square and aligned when assembled.

Having a double-layered base gives it strength and helps the bolts seat well later when tightening the sanding paper.

Step 3: Drilling Holes and Inserting Rivet Nuts

To make sure everything lines up perfectly, I temporarily attach the top and bottom pieces using double-sided tape. I mark the bolt positions on the top piece with a marking gauge, then drill straight through both layers using my drill press stand for clean, accurate holes.

Next, I separate the pieces and insert M6 rivet nuts into the bottom piece, adding a little Gorilla glue to lock them in. Make sure the nuts are seated flush with the surface — you don’t want them interfering with the sanding paper. Once the glue sets, I bolt the pieces together to test the fit.

Step 4: Routing Handles and Finishing the Block

Now it’s time to make this sanding block feel great in your hand. With both pieces still bolted together, I use my benchtop router table and a ball-nose router bit to cut finger slots on both sides. These grips make a huge difference in control and comfort during sanding.

Then comes the finishing. I sand the entire block using progressive grits, rounding over all sharp edges—especially on the top piece. A quick coat of wood oil really brings out the beech and walnut pattern. Lastly, I cut a strip of sandpaper to size, slide it between the layers, and secure it with M6 bolts. Done!

Baltic birch plywood is my top choice when it comes to woodworking materials. It is sturdy, strong, and has a quality surface which makes it perfect for use in cabinetry, and woodworking jigs making. The only downside is its price, which can be quite high compared to other types of plywood.

It is commonly used in furniture-making, cabinetry, and interior molding. It can also be used in construction for interior applications, such as wall panels and subflooring, and is often used in DIY projects for its versatility and ease of use.

MDF is a cheaper option than solid wood or plywood, which makes it more affordable. Its smooth surface and uniformity also make it easy to paint and finish, which helps give finished products a consistent look. However, MDF is not as strong or durable as solid wood or plywood, so it may sag or warp over time if it is not well-supported.

Below, you’ll find an example of a DIY router table constructed from plywood with added MDF strips. These MDF strips, combined with the plywood, create T-tracks that can accommodate various tools and accessories.

Types of MDF

MDF boards are made of leftover wood materials of hardwood and softwood, including pine, spruce, and eucalyptus. There are two primary varieties of MDF, namely standard and moisture-resistant MDF.

Standard MDF is ideal for indoor purposes and often employed for manufacturing furniture, cabinetry, and decorative moldings.
Moisture-resistant MDF comes with water-resistant properties, making it a better option for humid areas, such as kitchens and bathrooms. It is also used for outdoor applications, such as outdoor furniture and trim work.

You can also find other types on the market, such as fire-resistant or ultralight MDF.

PROS:

Strong and sturdy, with no knots or other imperfections like natural wood
More affordable than many other wood products
Can be shaped and cut easily

CONS:

Prone to moisture damage and swelling if not sealed properly
Difficult to repair if it gets damaged or dented
Not as strong as natural wood

I really enjoy using MDF for my projects because of its strength, smooth and flawless surface, affordable price, and ease of workability. In addition, its versatility allows for a wide range of uses and design possibilities.

3. HDF (High Density Fiberboard)

HDF is a type of engineered wood product made of wood fibers that are compressed under high pressure and temperature with an epoxy binder. HDF is similar to MDF, but it has a higher density due to the additional pressure used during manufacturing. This results in a stronger and more resistant material that is less prone to warping or sagging.

HDF has a variety of benefits and uses. It is an easy to work with material, that is commonly used for flooring, as it is strong enough to withstand foot traffic and heavy furniture. It is also used for decorative paneling, shelving, and furniture construction. HDF is more water-resistant than MDF, making it suitable for use in areas with higher humidity levels such as bathrooms and kitchens.

While HDF and MDF are similar in construction and use, the main difference between them is the density. HDF boards have a higher density than MDF boards, making them stronger and more resistant, but also more expensive.

PROS:

Inexpensive compared to other types of engineered wood products.
Smooth surface that is ideal for painting and laminating.
Can be made from recycled materials

CONS:

Less durable than other wood products, can easily chip or break
Absorbs moisture quickly

5. OSB (Oriented Strand Board)

OSB is made by compressing and bonding together layers of wood strands or chips. These strands or chips are typically made from timber or scrap pieces of wood and are arranged in a specific orientation to give the board its strength and stability. The layers are then coated with adhesive or resin and pressed together under high temperature and pressure.

Compared to other types of boards, OSB is known for its strength and affordability. It is often used in construction as a sheathing material for walls, roofs, floors, and other woodworking applications. The orientation of the wood strands in the board gives it enhanced strength and resistance to splitting and warping, making it a great choice for structural applications. Additionally, OSB is often more affordable than other types of boards due to its use of scrap wood materials.

Quality can vary; higher-quality veneers closely resemble solid wood, while cheaper ones can lack the genuine feel and look.
